I was assigned to bring a rice krispie treat to a beginning of the summer party. I decided to try my hand at the famous treat in cake form. And can I tell you – it was amazing! The cake is my favorite type of combination; easy to make, really good to eat, and creative to present. To make it you don’t even have to turn the oven on, perfect for the warm days ahead.
To make the rice krispies cake, make three pans of rice krispies treats. Since the layers will be very thick be sure to use an extra soft treat recipe. Here is my favorite; Melt 4 tablespoons of butter in a large saucepan, add in one 10 oz bag of marshmallows. Stir until marshmallows are about 85% melted (not all the way).
Take off heat source and add 7 cups of Rice Krispies cereal. Stir until well combined and pour into cake mold. Let dry about five minutes before popping out to dry completely for about an hour.
Using a cheesecake pan is the easiest option since you can pack the treats in tight and then pop them easily out. I molded each cake and popped them out to dry completely on wax paper.
Once the molds are made, stack and frost the cake!
PS. Here is the rest of the creative cake series.
I love this – have been wanting to make rice krispie treats with frosting for a while and this is much much cuter…
This looks delicious! What did you use for frosting?
Mary, thanks – I used frosting from a can, as you probably could have guessed;) Here’s a great recipe though if you want a good thick frosting that would taste even more amazing – http://www.foodnetwork.com/recipes/gale-gand/quick-vanilla-buttercream-frosting-recipe/index.html
How difficult was it to cut?
Jen, I’m going to be totally honest – we used a serrated knife (the one I usually use to cut french bread). A simple cake server will not work. But much like the french bread – it was SO WORTH IT! Hope that helps:)
This is pure brilliance! I love this idea and rice krispies with frosting are soooo tasty. Much easier than a cake! Thanks for the post.
OMG!! Think i might make this for my sister’s wedding next week!!! Love it!
This looks great – simple and yummy! I’m thinking of using marshmallow creme or making a marshmallow meringue and frosting with that – to make it as “rice-krispiesh” as possible! Thanks so much for this!
is that the recipe for all three layers?
Watch Independence Day eating a cake like that, wow, fantastic idea.
Yeah but I want to see you cut into it!
I imagine it wouldn’t cut so easily…
This is really cute and looks really yummy! :)
I think this would be even better with peanut butter between one layer and nutella between the other :)
Lindsey, that sounds amazing! Let me know how it tastes when you try it out:)
Is that the recipe for 1 layer or all 3???
I want to do this for my 50th wedding celebration–I want one for each table as the decoration as well. How fun!!! Also, I am unable to see the recipe.
